Pretzel Bites

Pretzel bites are miniature versions of traditional soft pretzels made from the same yeasted bread dough but shaped into small, bite-sized pieces.

Ingredients

  • 1 cup sourdough discard (unfed or active starter)
  • 3- cups all-purpose or bread flour
  • 1 teaspoon instant yeast
  • 1 tablespoon brown sugar
  • 1 teaspoon kosher salt
  • ¾ cup warm water
  • 2 tablespoons melted butter
  • ⅔ cup baking soda (for alkaline bath)
  • Coarse pretzel salt or flaky sea salt
  • 1 egg (for wash, optional)

Instructions

  1. Activate yeast: Combine warm water (110°F), brown sugar, and yeast in small bowl. Let stand 5-10 minutes until foamy.
  2. Mix dough: Blend foamy yeast with sourdough discard in stand mixer. Add flour and salt, mixing until shaggy. Knead with dough hook 5-7 minutes until smooth and elastic.
  3. First rise: Place in oiled bowl, cover, and rise 60-90 minutes until doubled in warm location.
  4. Shape bites: Divide dough into 6-8 portions. Roll into 20-24 inch ropes, then cut into 1½-inch pieces for 80-100 bites.
  5. Boiling bath: Boil water, add baking soda carefully. Boil bites in batches 30-45 seconds until floating. Remove with slotted spoon.
  6. Bake: Brush with egg wash, sprinkle with salt. Bake at 425°F for 12-15 minutes until golden brown.
