- 1 cup sourdough discard (unfed or active starter)
- 3-3½ cups all-purpose or bread flour
- 1 teaspoon instant yeast
- 1 tablespoon brown sugar
- 1 teaspoon kosher salt
- ¾ cup warm water
- 2 tablespoons melted butter
- ⅔ cup baking soda (for alkaline bath)
- Coarse pretzel salt or flaky sea salt
- 1 egg (for wash, optional)
Instructions
- Activate yeast: Combine warm water (110°F), brown sugar, and yeast in small bowl. Let stand 5-10 minutes until foamy.
- Mix dough: Blend foamy yeast with sourdough discard in stand mixer. Add flour and salt, mixing until shaggy. Knead with dough hook 5-7 minutes until smooth and elastic.
- First rise: Place in oiled bowl, cover, and rise 60-90 minutes until doubled in warm location.
- Shape bites: Divide dough into 6-8 portions. Roll into 20-24 inch ropes, then cut into 1½-inch pieces for 80-100 bites.
- Boiling bath: Boil water, add baking soda carefully. Boil bites in batches 30-45 seconds until floating. Remove with slotted spoon.
- Bake: Brush with egg wash, sprinkle with salt. Bake at 425°F for 12-15 minutes until golden brown.
