- 1½ pounds ground lamb (or ground beef)
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 cup frozen peas
- 2 tablespoons tomato paste
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 2 tablespoons flour
- ¼ cup active sourdough starter
- 2 pounds russet potatoes
- ½ cup butter
- ¼ cup milk
- 1 egg yolk
- 1 cup sharp cheddar cheese
- ½ cup sourdough breadcrumbs (from day-old bread)
Instructions
Prepare the Filling:
- Brown meat – Heat oil in a large skillet, brown ground lamb in batches until caramelized, 8-10 minutes. Set aside.
- Build flavor base – Sauté diced onion, garlic, carrots, and celery until softened, 5 minutes.
- Deglaze – Add red wine, scraping up browned bits. Cook 2 minutes until the alcohol reduces.
- Add richness – Stir in tomato paste, cook until darkened. Return lamb, add broth, and Worcestershire.
- Simmer – Cook 20-25 minutes until rich, gravy-like consistency. Season with salt, pepper, fresh thyme, and rosemary.
Prepare Sourdough Crust:
- Breadcrumbs: Pulse day-old sourdough until coarse, toss with olive oil and salt
- Discard base: Mix sourdough discard with oil and salt, spread in a greased dish
Assembly:
Preheat oven to 400°F. Layer filling and sourdough elements, bake 30-35 minutes until golden. Rest 10 minutes before serving.
Notes
Bake shepherd’s pie sourdough at 400°F (200°C) for 30-35 minutes on the middle rack. The dish is done when sourdough breadcrumbs turn deep golden brown and crispy, and gravy bubbles actively around the edges.
