- ½ cup active bubbly sourdough starter
- ¾ cup water
- 1 ½ tbsp. sugar or honey
- 1 ½ tbsp. salt
- ¼ cup softened butter
- 3 cups unbleached all-purpose flour
- 1 ½ tbsp. melted butter
- Coarse salt and garlic powder

Instructions
- Combine sourdough starter, water, sugar, and softened butter in a stand mixer fitted with a dough hook. Gradually add flour ⅛ cup at a time, until the dough begins to pull away from the mixer. Mix these ingredients until a smooth dough forms.
- Knead the dough on low speed for 8 minutes, until the dough is smooth and elastic.
- Lightly grease a large mixing bowl, and transfer the dough into the bowl. Cover loosely with a lid and allow the dough to ferment at room temperature for 3-4 hours. Cover and refrigerate for 24 hours. Remove the dough from the fridge one hour before baking.
- Transfer your dough to a lightly floured work surface, and roll the dough to a 12×7-inch rectangle.
- Use a pizza cutter to slice the rectangular dough into 12 breadsticks. Transfer the shaped breadsticks onto a parchment-lined baking sheet.
- Cover the baking sheet with plastic wrap and allow the breadsticks to proof in a warm place for 2 hours. Preheat the oven to 400 degrees Fahrenheit.
- After 2 hours, remove the plastic wrap from the baking sheet and place the breadsticks into the preheated oven. Bake the breadsticks on the center rack for 10 minutes, or until they’re a light shade of golden brown.
- Use a pastry brush to brush the hot breadsticks with melted butter. Sprinkle with salt and garlic powder.
Notes
- If you’re looking to bake a batch of light and fluffy breadsticks, then you may want to add a packet of commercial yeast to your sourdough breadsticks recipe.
