Ingredients

  • ½ cup melted butter
  • 1 cup dark brown sugar
  • 3 ripe bananas
  • 2 large eggs
  • ½ cup sourdough starter discard
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp salt

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Lightly grease a 9×5-inch loaf pan with butter.
  3. Combine flour, baking soda, baking powder, and salt in a medium bowl.
  4. In a stand mixer or large bowl, mix melted butter and brown sugar for 5 minutes until you’re left with a light and fluffy mixture.
  5. Add the eggs, vanilla, mashed bananas, and sourdough discard.
  6. Gradually fold in the dry ingredients until well incorporated.
  7. This is your chance to include any additional add-ins you want i.e., pecans, walnuts, and chocolate chips.
  8. Pour the banana bread dough into a greased loaf pan. You could line your loaf pan with parchment paper instead.
  9. Bake your banana bread for 50-60 minutes. Allow the bread to cool completely before slicing and serving.
