  • 1¼ cups (300ml) filtered water, lukewarm
  • 1½ teaspoons (9g) fine sea salt

Instructions

  1. Mix flour and water, rest 30-60 minutes
  2. Add active starter and salt, incorporate well
  3. 4-6 hours with stretch and folds every 30 minutes for first 2 hours
  4. Divide into 8-12 pieces, shape into loose balls, rest 20-30 minutes
  5. Shape into tight balls, place on parchment-lined baking sheet
  6. 1-3 hours for final proofing, until puffy and nearly doubled
  7. Bake at 425°F (220°C) for 20-25 minutes until golden and 200-205°F internal temperature
