- 4-6 hours with stretch and folds every 30 minutes for first 2 hours
- Divide into 8-12 pieces, shape into loose balls, rest 20-30 minutes
- Shape into tight balls, place on parchment-lined baking sheet
- 1-3 hours for final proofing, until puffy and nearly doubled
- Bake at 425°F (220°C) for 20-25 minutes until golden and 200-205°F internal temperature
