Strawberry pretzel salad is a stunning three-layer dessert that combines the unexpected crunch of pretzels with creamy sweetness and vibrant strawberries suspended in ruby-red Jell-O.

Ingredients

  • 2½ cups mini pretzel twists, coarsely crushed
  • ¾ cup butter, melted
  • 3 tablespoons sugar
  • 8 oz full-fat cream cheese (block variety), softened
  • 8 oz Cool Whip whipped topping
  • 2 cups fresh strawberries, sliced (or 16 oz frozen sweetened strawberries)
  • 6 oz strawberry gelatin mix
  • 2 cups boiling water
  • 2 cups cold water

Instructions

  1. Preheat oven to 350°F. Crush pretzels into coarse pieces, measuring exactly 2½ cups.
  2. Combine crushed pretzels with melted butter and 5 tablespoons sugar, mixing thoroughly. Press firmly into ungreased 9×13-inch glass dish.
  3. Bake 10 minutes until bubbly and golden. Cool completely at room temperature.
  4. Beat cream cheese with ¾ cup sugar until fluffy and smooth, 3-4 minutes.
  5. Gently fold Cool Whip into cream cheese mixture using rubber spatula.
  6. Spread over cooled crust. Refrigerate 1 hour.
  7. Dissolve strawberry gelatin in 1 cup boiling water. Add strawberries and juices.
  8. Refrigerate gelatin mixture 1 hour until consistency of uncooked egg whites.
  9. Layer over cream cheese. Refrigerate 4 hours or overnight.
  10. Cut into squares with sharp knife and serve.

Notes

Preventing Soggy Crust:

  • Ensure the pretzel crust cools completely after baking to prevent steam-created moisture
  • Spread the cream cheese mixture to the pan edges with no gaps or thin spots
  • Maintain complete coverage as the cream cheese acts as a protective moisture barrier
  • Allow the cream cheese layer to set for a minimum of one hour before adding the gelatin layer
