Shaping Sourdough: Tips and Techniques

Shaping creates surface tension on the outer section of the dough, without stressing the interior of the dough.

The surface tension encourages the loaf to maintain its shape while baking, as well as produce a good oven spring.

Sourdough Shapes

Batard is bit like a baguette but much shorter and thicker

Boule is a round loaf, typically what you associate with sourdough bread

Baguette is a long and thin, tube-shaped loaf

Flat applies to many sourdough bread that are not meant to rise

Plaited is an attractive braided loaf
