Easy Sourdough Discard Crumpets

What are Crumpets? Crumpets are a small type of round bread. Similar to English muffins, they’re cooked on a griddle. Crumpets have a spongy pancake texture and are filled with tiny holes.

Sourdough crumpets are a delicious twist on the classic breakfast crumpets.

The sourdough discard will provide a subtle yet delicious sourdough element to your recipes, which is why I always encourage sourdough bakers to use it.

Ingredients You'll Need: – 1-2 tbsp unsalted butter – 1 cup sourdough starter discard – 1 tsp. granulated sugar – ⅜ tsp baking soda – ¼ tsp kosher salt

Top your crumpets with marinara sauce or tomato paste, then sprinkle some mozzarella cheese and finish with some sliced jalapenos, or black olives for a briny, spicy kick.

I like to combine fried eggs, sausages topped with baked beans and throw it all together.
