- 4 cups all-purpose flour
- 1 packet (2¼ tsp) active dry yeast
- ⅓ cup granulated sugar
- 1 tsp salt
- ¾ cup whole milk, lukewarm
- 3 large eggs (room temperature)
- ½ cup unsalted butter, softened
- 1 egg for wash
Instructions
- Activate the yeast. In your stand mixer bowl, whisk together lukewarm whole milk, sugar, and active dry yeast. Let it sit for 10 minutes until foamy – this confirms your yeast is alive.
- Mix the dough. Add flour, salt, and 2 eggs to the yeast mixture. Using the dough hook, mix on low speed for 3-5 minutes until a shaggy dough forms.
- Incorporate butter. With the mixer running on medium speed, add softened butter one piece at a time. This takes 10-15 minutes, but the dough will transform into smooth, elastic perfection.
- First rise. Shape dough into a ball, place it in an oiled bowl, and rise for 2 hours until doubled.
- Cold fermentation. Punch down gently and refrigerate overnight for complex flavors.
- Shape and final proof. Divide chilled dough, shape as desired, and rise 1.5-2 hours until puffy.
- Bake to perfection. Brush with egg wash and bake at 375°F for 25-35 minutes until golden brown.
Notes
Temperature matters: butter should leave a fingerprint when pressed, but not be melted. Room temperature eggs blend more easily than cold ones. Milk should feel like bath water – lukewarm activates yeast perfectly.
