- 3 cups (375g) unbleached bread flour
- 1¼ cups (300ml) lukewarm water, around 80°F / 27°C
- 1½ teaspoons (9g) fine sea salt or kosher salt
Instructions
- Mix flour, water, and salt into a shaggy dough. Rest 30 minutes (autolyse).
- Stretch and fold for 5 minutes with wet hands.
- Cover and bulk ferment at room temperature for 8 to 12 hours until doubled.
- Shape into a round or oval loaf. Place in a floured proofing basket, seam side up.
- Final proof 30 to 60 minutes.
- Preheat oven to 450°F (230°C) with Dutch oven inside.
- Transfer dough into Dutch oven seam side down, score the top.
- Bake covered 20 minutes, then uncovered 20 to 30 minutes until deep golden brown.
- Cool on a wire rack at least 1 hour before slicing.
Notes
- Internal temp when done: 200 to 210°F (93 to 99°C)
- Dough should feel tacky, not wet or stiff
- Warmer kitchens will ferment faster; cooler kitchens will need more time
- For more tang, extend fermentation or add up to 20% rye flour
- Store in a paper bag or bread box up to 3 days; freeze slices for up to 3 months
