A sourdough starter is a combination of flour and water that is left to ferment at room temperature, and fed twice a day to encourage the production of wild yeasts and good bacteria.

With regular feedings, the mixture will eventually develop into a levain, which can then be used for sourdough breads.

Why Sourdough Bakers May Use Eggs

Normally, and traditionally, eggs weren’t added to sourdough bread recipes. However, they have recently become a common and favorite ingredient amongst modern sourdough bakers. And for good reason.

Typically, eggs are added to enrich a sourdough recipe, such as challah or brioche bread that carries a moist and buttery texture, with a hint of sweetness. However, this does not mean that bakers will not choose to add an egg or two to a standard sourdough bread recipe. The addition of egg provides a wonderful texture, flavor, and an overall rich flavor profile.

That being said, adding eggs to your sourdough bread is entirely up to you, and the type of loaf you’re trying to make.

How to Replace Eggs in Bread Recipes

There are many reasons why one may prefer to make a sourdough recipe without eggs, whether that is due to allergies, or a certain diet requirement. The important thing is that the recipe doesn’t become affected by changes like these. In certain circumstances, you will require a viable substitute.

To capture the richness of eggs, you can substitute with elements like tofu and yogurt to capture a lovely creaminess in your sourdough recipes. This is especially great for sourdough cupcakes or muffin recipes.

Additionally, substituting eggs for vinegar or baking soda will contribute to the rise of sourdough bread. Although you may want to consider the taste of your final product and add just a small amount of vinegar so that it doesn’t become overpowering.

Is Sourdough Bread Vegan?

Traditional sourdough bread is perfectly fine for those following a strict vegan diet to eat. Sourdough bread doesn’t contain traces of eggs, butter, or milk in the recipe. Furthermore, sourdough bread does not require the addition of eggs to taste good.

However, some bakers may choose to go a step further in their baking and dab a quick egg wash over the tops for an enriched crust.

  • Enriched sourdough bread will most likely contain additional ingredients, including eggs, and dairy products, which aren’t vegan-friendly.
